Stellar 7 (Apple II) - because it was the first game I had that had 3D graphics (though wireframe, but that was great back then) and it was darned hard

Elite (Apple II) - took the 3d (wireframe) graphics into space and basically had an unlimited (though somewhat repetitive) universe to explore

Half Life - because it took the 3d shooter to a different level of game play where the story was intricate and important, and the enemies used some decent tacticts against you

Half-Life 2 - more of the same, but on a much grander scale

Dune II - because the first real RTS and pretty immersive

Starcraft - took what Dune II had started and took it to a whole new level - great storytelling and online play

Falcon 4.0 - achieved what flight simulators (including its predecessors in the Falcon family) to that point had been missing - very thorough technical simulator of (most) of the details of flying a plane. And had a truely dynamic campaign.

Team Fortress 2 and Team Fortress Classic - because of different character classes and the need to compose teams and play the game in a way that the players must compliment each other.
War Thunder - brought mass-scale, online flight simulation and combat to the masses in a way that makes it accessible for everyone.
