I was fascinated by the Insomniac Museum which unlocks at the end of Ratchet and Clank : A crack in time.
I thought it was really interesting to go about and see all of the stuff which was left out of the game, and the explanations for why.

Unseen 64 and Lost Levels are great sites, too.
