Well, I can see why a Christian, such as my sister, would get more passionate than I do because she wants to convince me of Christianity, whereas I do not think I am trying to convince her of agnosticism.

But my brother is a Christian, too, and wants me to become one but does not take such an approach.

sometimes the point of debating is just to get people caring about a topic. a person may enter the debate uncertain about their opinions, then when it all gets heated up they start to care about one side or the other. sometimes i don't mind what people's opinions are as long as they are thinking about it and discussing it. so it's good to have people riled up and caring deeply about something even if they don't agree.

debates also get people on the sidelines thinking about their opinions, and when i am arguing a point i am thinking of them. i know that i will never, ever convince my opponent of anything, but maybe i can get someone on the fence to give a crap about the subject.
