Let me tell you something I found out by chance:

I'm not fat, but I'm not skinny either. Like many of the people in my family, my blood tests started showing signs of pre-type II diabetes. Also, like many autistic people, I have gut issues. I began going gluten free and those issues improved. As a byproduct of going gluten free, my glucose and cholesterols have improved markedly.

I thought I read somewhere that wheat was modified after the great depression so that a slice of bread would go farther in filling the belly. Meaning, it would be more sustaining for longer amounts of time. My theory is that one act has a big hand in what's happening worldwide with diabetes. Heirloom seeds for vegetables are the seeds the way they used to be, more susceptible to blight, harder to grow, etc... Todays seeds are more resistant to disease, easier to grow, etc...

My theory is that it's the genetic modification of core ingredients that is the biggest contributor to the uptick in diabetes. I haven't researched it, I'm just watching my own numbers decrease and the way I carry my weight change. I used to just look like a regular chubby, now I'm still the same size but I'm built like a brick house, my fat is muscle and it has rearranged itself to be further away from my belly. Belly fat can be associated with insulin resistance...
