Even if you can only eat meat, vege, fruit, nuts, herbs and spices (like me and some others) you can still put weight on.
Try thai curry, it usually requires coconut milk. You can also make coconut rice which will boost your calorie intake.
There are vegetables like yuca (cassava), malanga (taro), yams, plantains and others which are high in calories and good for you, and aren't reactive in way of allergies for most people, even sensitive ones.
If you have trouble eating solid food you could also try fruit shakes mixed with almond milk or light coconut milk.
When I have trouble eating from being glutened, I usually drink cashew milk then, as it's the only thing that stays down.
Have you checked that this is psychological and not actually a medical issue? I had a lot of similar symptoms from an undiagnosed disease that resulted in most of the things you said as well as malnutrition. I didn't used to eat because it didn't make me feel good, and I would feel better avoiding food. They insisted I was anorexic until they found out about the disease.
