Have you considered miniature gardening such as bonsai trees and "fairy gardens"? It can be done on a table top.

I grow some indoor plants. My husband gave me a bonsai jade plant, but it has outgrown its original vessel and formed multiple large, gangly trees. Yes, I know you're supposed to trim bonsai, but it just grew too well! I have also tried orchids but lack the attention to detail.
