Tulum cheese made by combining sheep and goat's milk is my favorite. One of the very few reasons why I'm looking forward to going back home.

I like brie, Camembert, Wensleydale, goat cheese (especially when flavored with things like garlic or blueberries), gouda, parmesan, manchego, asiago, pecorino, and aged cheddar. I'm always open to adding new favorites when it comes to cheese.

^ It's because they don't pasteurize the milk in Europe. I don't blame the US, there's some really scary sicknesses you can get from raw milk products.

I like cheddar cheese, mozzarella, Havarti, and whipped spreadable cream cheese. I don't get to eat many of the fancier types, and I'm can't get past the utter stink of some of them.

COLD, sharp Cheddar (room temperature, RALPH - and I prefer yellow, to white), Mozzarella, Swiss, and Bleu (aka Roquefort), are some of my favs----I absolutely LOVE cheese!!
