There are variations of black pudding. Black pudding is a mixture of oatmeal, pig's blood, pork fat and other spices. White pudding is a variant of this common in Scotland and Ireland that is made to a similar recipe that omits the pig's blood and is slightly spicier. A similar but far spicier variant of white pudding, known as Hog's pudding, is made in Cornwall and Devon.
Red pudding is a lesser-known third variant which is, again, similar to black pudding but is sold, fried, from chip shops in Scotland.
Black pudding (not as a burger, but just as black pudding) is a common feature of the full English breakfast. White pudding (along with black pudding) is a very common part of the Irish breakfast.
