Eastern NC BBQ is a whole hog (headless) that is cooked over coals, and pulled from after cooking. A lot of times it is chopped with varying degrees of courseness. My guess is that the BBQ the Texas Grandmother ate was chopped very fine.

FWIW, I have also encountered sliced BBQ in Charlotte, NC.

Well, it's pulled pork. Anyone who ate in a school cafeteria would remember what I'm talking about; it's pork that's be reduced to a mushy pile of shredded meat, with vinegar and pepper permeating it (or at least we assumed it was pork...;) They'd also serve it with 'greens', complete with bottles of vinegar on the tables...;)

The method just described in the previous post is 'pig pickin's', although I've seen 'em with the head left on...;)

But as mentioned previously, I rarely get east of Raleigh, so I'm no expert. This is all 2nd-hand from a guy who wrote for the 'Noise and Disturber', the local newspaper. About every 2 weeks during the summer, it'd be a long rant about 'Eastern NC barbecue'...who knew?...;)

You can get Texas barbecue in NC at a place called Dickey's, although someone tried opening up an NC barbecue place in Waco TX in the 70s, it lasted about 6 weeks...;)

But I could be prejudiced...;)

Here's some pictures from the last one I was at. These foods are all made from TVP. There can also be veggie dogs and burgers, grilled vegetables, etc.
