Spicy Roasted Vegetable Macaroni and Cheese

Recipe

Our classic. We've been cooking this since we first met. Its not that spicy, I'm a wimp :P. We use regular carrots and gluten free flour/pasta. Added Parmesan on top.

^ that looks amazing, as do all of your meals. I cooked traditional bolognese sauce last night (only I didn't add the milk as I don't eat dairy) over gluten free pasta. Unfortunately I didn't have the forethought to take a photo but I'll try to remember next time I cook

I went to a dinner party on Friday night and the Mexican style mince was made with textured vegetable protein (TVP). I've never tried it before but it was good!

Learn something new everyday, ground beef = mince. The bolognese looks excellent. I miss going out to eat. In Florida, we had this place called Ethos. Had a mean chickun gyro (vegan). Torturing myself. We should be picking up Indian tomorrow, ABG has to go to her work office in the capital for the first time in months to pick up a new laptop. Be the second time since March that we've eaten anything not from the grocery store.

Yes, thanks to covid (and extreme boredom) I've rediscovered the joy of cooking, which is one of the positives to come out of these strange times.

We have a cafe/resaurant here called Free, which I consider false advertising because it is far from free, being on the expensive side, but they cater for all the interesting diners who are vegan, vegetarian, raw foodies, gluten/dairy free etc. it's good that we're considered more than in the past, when the only thing on the menu you could eat was the limp salad. :?
