I would make the sun output plenty of infrared but very little visible light, so it would be dark but it would still be warm

Are you sure you know how to alter the molecular makeup of plants to render them able to use infrared?

If I were a God:

I'd give the most craziest people that noone believes a little nudge to the truth of ... it all. I like the "So he WAS right after all!" thing.
Banish George W. Bush and his friends to oblivion.
Be friends with all the other Gods.
Create a family of Yeti that roam North America.
Make dragons.
Make a new color.
Schedule friendly aliens to visit earth.
Make weekends 3 days instead of two.
