what makes the best burger?
Last couple of batches of burgers I made came out pretty good.
3:1 ground beef / ground italian sausage
Panko bread crumbs
Garlic powder
Old Bay
Steak seasoning
One large onion
One egg
Worcestershire sauce
Beef and sausage, garlic powder, old bay, steak seasoning, worcestershire sauce, panko, and egg all go into a bowl. Lay the onion on it's side and cut it into disks. Save the 12 (or so) largest rings from the middle slices and set them to the side. Finely dice up the rest of the onion and toss in bowl with everything else. Knead the meat mix thoroughly. Divide up into tennis-ball sized blobs, or similar.
Flatten onto a pan on medium to high heat and cook till browned on both sides, or as desired. Occasionally "squeeze" the patties with spatula to get a little juice out. Do not drain the fat from the pan. When the patties are done, toss the onion hoops into the burger grease and toss till soft / browned. Lay cheese on the patties as soon as they're removed. Add the cooked onions on top of the cheese. Pour the leftover sauces in the pan into a bowl and let cool. Use as au jus to dip the burgers. Toast the bun. Lettuce pickle mayo mustard.
