today i was again befallen by the continuing saga of spherical eggs.
i like 2 soft boiled eggs for breakfast. i boil them so that the albumen is set, but the yolk is still runny. i cut a piece of buttered toast into 5 equal strips (yet another matter *) in order to dip each strip in turn into the eggs until the runny part of the yolks are exhausted.
it is necessary to cut the narrow end of the egg (the top) off because the yolk is runny and fresh there, and at the bottom of the egg, the yolk gets harder which is perfect for a knob of butter to be inserted and mixed and spooned out and eaten to finish the egg.
this cannot be reliably achieved when the eggs are spherical like the ones i bought yesterday. i can not tell which is the top or the bottom of the egg, and when i go to chop the end off, i am seized with terror in case i chop the bottom off instead to reveal a hard yolk (which gets progressively runnier as one digs down). the whole world is turned upside down when that happens. i can not eat eggs in reverse. i must start with the toast and finish with the spoon.
now i have 10 spherical eggs left in the carton which i do not trust.
a damnation in disguise is the fact that the eggs are so fresh. i decided that the bottom (or fat end) of the egg is the end with the air pocket, and so the eggs would try to float with their air pockets up, but they are so fresh, they sit flat on the bottom of the saucepan giving no hint of their latent orientation. i wonder if i could buy an egg inspection lamp like they use at egg farms to see which ends the air pockets are in.
what has happened to chickens? there must be something going on because i am getting more and more cartons of these types of eggs !
* as well as that dilemma, the bread i bought has a serious crease in the top of each and every slice making equal strips impossible to cut. i like all my strips to be the same. when i encounter an odd shaped strip, i am at a loss as to what to do with it. i fear if i dip it into the egg, that the desired result will not be forthcoming, and thus i will waste the yolk on the inadequate strip.
all in all, it was a harrowing day.
