Changing names in a foreign country.

My mum is getting married to a 60 yr old ex spanish/portugese man from who I will call Stepfathertobe who has lived on and off in GB for 30 odd years with a daughter and 2 grankids. They both want to go to Spain, buy a home and get married and me to go with them. I asked them about surnames. Mum said she would take his. Stepfathertobe said no women keep their maiden names. He said people don't have middle names like we do all kids get two surnames one from each parent and normally have two christian names. They won't be giving me any siblings obviously. My mum really want me and her to both take on his surnames. Does anyone know what way it works in Spain for foreign people taking spanish surnames?
