Cheese to a person with a larger number of taste buds has a bitter note. People with fewer taste buds like myself tend to like hot and spicy food to. So my question would be how many people love hot and spicey food but do not care for cheese? My guess is
the number is quite small.

Isn't Feta goat cheese? Anyway, I likes it. I likes most cheese. If I had to pick one, probably a triple cream brie (it's almost butter), but I love good sharp swiss and white cheddar, ah, and how can I forget roquefort (sp?).

One of the reason we use salt in our foods and cheese is a relatively high sodium food
is because it mask bitterness. Alot of cooked foods also get more bitter and hence the need for salt. I made my own cheese one time made it with potassium chloride and it was very bitter! Potassium does a poor job of masking bitterness and is even slightly bitter itself.
