I'm always growing things indoors and find gardening very therapeutic. One of my better projects last year was growing a bed of herbs in an elongated pot for window sills. Of the three species I selected, the Lavender was a goner (on average I've always found Lavender quite hard to grow indoors; it easily gets 'leggy' and seems to need a great deal of light and air). But the Thyme took off very nicely and all but dominates what Oregano I also managed to grow.
I love scouring discounted sections in places for houseplants, too - one of my favourite pastimes is to find the most neglected, half-dead plant on offer at a fraction of it's original price, and nurturing it back to full glory. Depends of course if the plant is a seasonal variety that dies off after it's flowering period is done, but for many other species it's simply a case of them not having a dedicated human to look after it, many last for years.
Also: Coleuses. Though not herbs and very much an outdoor plant, so long as you regularly prune away the new growth to prevent it becoming too large and spindly, they can become absolutely beautiful houseplants.
