This certainly does not apply to EVERY old person but if an old man say in his 60s gets into a fight with a 19 year old why might he be at risk of getting 'knocked out'?

It would depend on the physical condition and skill of the older man.
A nineteen year old that has lived in an apartment his whole life would have no chance against a sixty year old rural logger.

It's easy to knock someone out. Not much effort needed there, and a healthy 60 year old man will be able to do it just as easily as a healthy 19 year old man. It's also far from the worst outcome in those things. No one should be fighting, but antisocial types are antisocial types and groups do groups things. No one knows if the opponent is one of those nameless nobodies or naturally skilled/skilled at these things, regardless of age.

For the same reasons as the 19-year old.
