People been buying stuff so they can stock up, beer, food & other stuff, what if something expired if you stock up on it.

If something has recently expired, it can be okay to eat, depending on the food or drink item.

But normally people try to eat or drink things before their expiry date and buy the appropriate amount of stock so that they consume before "best before" or "use by" dates.

Yeah but tinned food can be used decades later
I saw it on the news

When my girlfriend was a kid her parents bought a bit of food at food pantry type places because her family was very poor(Cass has three siblings & her dad worked aLOT at cr@p pay for his uncle who kept promising that he'd inherit the farm but his uncle was lying to get dirt-cheap labor) & a bit of the food at those types of places is stuff other stores were wanting to get rid of because it's expired or ready to expire. I went to a Catholic high-school & we had to do a few community service hours a couple times a year & I sometimes volunteered at a food bank & a bit of their food donations are expired. Some types of food are usually still safe quite a while past their expiration date but may taste kinda stale or flat, though it's best to toss it if the container or packaging is damaged or opened as well. However other expired food is unsafe after it's expiration date, more so food that needs to be kept cold before it's opened or food that has a short shelf life. We were grocery shopping this morning at Shaw's & they were selling pepperoni that expired a month ago. Cass went through the packs checking & found a pack that expires in July & got that. She wouldn't have cared as much about about it expiring last month if she was planning to use the whole pack at once cooking one pizza but she adds some pepperoni when cooking Digiorno & snacks on pepperoni a bit so an opened pack sometimes lasts a while, we keep it in the fridge.

There places on the internet, that have established quite a reputation for selling ready to eat, meals ,meant for Long term storage .

The only things I trust the use by date is
Milk
Bread
Meat
Other than that most processed foods have enough preservatives to be ok to eat for some time after the recommended date.
Though the quality tends to decline, crisps become less crisp ect.

I have a dozen cans of SPAM as it has a shelf life of 5 years or more.

MREs/Meals Ready-to-Eat are military type food rations that tend to keep a very long time & I heard some of them don't list experation dates. Some non-military individuals stock a bit of them to have on hand for emergencies that can cause them to lose their electricity for a while like hurricanes. Some doomsday preppers hoard them as well.

Either you rotate through and eat the stuff that's going to go bad, or you donate the stuff nearing it's expiration date. People doing this commonly spend a lot of money.

But if you're talking about a week or two's worth, it's not necessarily very hard to periodically eat through.

The dates are just estimates on most cases, they may last longer or shorter than indicated.
