STONE SOUP

4 fresh tomatoes
5 dried shitake mushrooms soaked and cut (bite size pieces)
5 tablespoons grated cheddar cheese
2 medium sized potatos
1 (14 oz.) can Italian tomato sauce
7 c. vegetable stock
1 c. chopped onion
1 clove garlic, minced
1 c. sliced carrots
1 tsp. basil
1 tsp. oregano
2 c. sliced zucchini
1 green pepper, diced
1/4 c. chopped parsley
1 1/2 c. sliced dill pickles
2 c. frozen tortellini

Combine first 9 ingredients in a large pot and simmer 30 minutes. Add remaining ingredients and simmer an additional hour, adding more water as necessary to cook tortellini. Of course, you must have a proper stone in the bottom of the pot to make it authentic Stone Soup. Makes 10 servings.

I know the song "Stone Soup" and we had a couple different versions of the book when I was a child.

Looks yummy. Have you made it yourself yet, jjstar?

Does look good, eh? Haven't made this particular recipe - having all the ingredients at once is bit of a strange thing around here. I just throw stuff together with a good base. Always comes out good. There are so many good tales, lores and trivia about the soup made from one solitary stone, lol.
