after reading all of this, and realizing that my son's aversion to eating with us isn't just him being rigid with expectation and it really is yet another problem from his super sensitive hearing, I'm going to try letting him wear headphones while he eats and see if we can manage to have him be a part of the family at the table during meal time.
His school uses the headphones for many occasions when the noise levels will be louder or more unpredictable then usual, he can still hear with them on, but stops the quieter annoying sounds like food chewing as well as tones down the loud sounds.
Maybe he'll actually eat better if he can join us at the table.
