I don't have the issues you have with food preparation and I can prepare a meal in very little time at all, but I've bought myself a soup maker. The reason for this is that my daughter doesn't like 'bits' in her soup and I hated having to wait until it cooled, before transferring it to a food processor, to liquidize it. The soup maker does everything for you. You only have to add the raw ingredients and switch it on. I add fresh veg and chop it myself, but you could use pre-chopped fresh or frozen veg instead. The only thing it won't cook is meat, but you can cook it separately and add it at the end, if you want to.

Boil eggs - they keep a week.

I like cereal for a meal - I see nothing wrong with it. Fruit and granola is plenty healthy and filling. My family always liked "breakfast for supper". You can do whole wheat frozen waffles and stuff, too. It's the nutrition, not the convention.
