I didn't think I had a problem with either bread or milk. Bread and cheese I'd still say is my favorite food (I just haven't had them in almost 2 years.) But then I found out I have celiac disease. There was never, ever, ever any indication for me that bread or wheat was making me sick. I never liked barley or beer much, (beer made me bloated) but that's it.
After being gluten free I found that I suddenly found that couldn't stomach dairy. (I theorize that that only became noticeable after stopping gluten because gluten, in celiacs, causes a leaky gut, basically your intestinal lining will have larger gaps in it than normal which means larger molecules will pass through whole into your bloodstream. I figure the lactose was getting absorbed whole instead of fermenting in my gut. Either that or I was always bloated and as such I never made any sort of connection.) Since hearing about and reading a couple of studies that suggest that a subset of celiacs might be getting a similar autoimmune reaction to alpha and beta caseins, I cut all dairy out completely. I still do want to try adding it back into my diet, but not until I feel super healthy.
I would run to the doctor to get tested for celiac disease if I suspected that wheat was making me sick.
