I notice the more dreams I have that I can remember upon waking, the more groggy and hung-over I feel when waking up... It doesn't help my mood when waking up much...

if you remember a lot of your dreams it means you woke up in the middle of a heavy REM cycle, or are waking up long enough, often enough that you're processing the material and not losing it to normal sleep amnesia. if you're getting enough sleep, your last REM cycle should be a light one. if you're remembering a lot of dreams, you're either cutting your night's sleep short, going into REM late, or waking up a lot without realizing it. would it be possible for you to have a sleep study ordered by your doctor? if you're waking up tired a lot, there's a possibility you might have sleep apnea, which can be very dangerous to your health in a number of ways. do you wake up with headaches a lot?
