Here's a list of some that I like:

Reggiano Parmesiano (The original Parmasian)
Pecorino Romano ( Sheeps milk Ramano, Originated by the Romans)
Sharp Provolone
Gorgonzola (Italian Blue cheese, but I like the demestic stuff better)
Extra sharp Vermont Cheddar
Brie/Camembert (Similar, but from differant Regions of France)
Gruyere
Aged Gouda
Stilton (English blue cheese, similar to cheddar)
Mozzerella Bufala (Italian Buffalo milk Mozzarella)
Emmenthaler (aka Swiss)
Baby Swiss
Munster
Asadero/Chihuahua (Mexican cheese similar to Munster in flavor)
Fontina

I've also had a French cheese that seemed to be an aged dry camembert that was really good, though I don't know the name of it.

In the UK you can get GF/CF free food on prescription - pizza bases, crackers etc.

They even produce special GF/CF 'biscuits for cheese' - wtf? :?

I like strong cheddar - not really strong, just strong. My favourites are Davidstow and Cathedral City. I don't enjoy many mild cheeses like Edam. I do enjoy Brie and Camembert though, and Port Salut. I don't like blue cheeses though.

Red Leicester
Dolcelata
Parmesan (as long as it is fresh)
Brie (ripe & runny)
Cheshire (crumbly)
Mozarella (as long as it's in a Mozarella, Tomato and fresh basil salad)

I also like cheesecake but it has to be the thick german kind, american cheescake is far too soft.

I am not keen on edam it's like rubber with holes in it.

In love with cheese, all kinds. All time favorite though:

Aged Cheddar, the older the better.

I  cheese. I couldn't eat anything without a piece or slice of cheese in it.
