Movement and thinking.
I like to move too when my mind is going on something. I used to get extra wild as a kid, run barefoot through the woods thinking I couldn't be injured. Action in my brain gives me tons of energy that I must release. I watch how stimulated I get at night or I won't sleep, won't even want to sleep. Sitting and planning something at a table with others gets me all wired, even if it isn't something extra important. If I had my way I'd be getting up and running around the table a few times during the process. I have learned to just release it by rubbing my hands together, rearranging my hair, rubbing my temples, gentle teeth clench, brief heal bouncing. I've learned to not do anything too much to be extremely annoying. I had no control when I was younger and drove everyone crazy with it.
