If an adult had an assessment for Depression/Bipolar Disorder, would the Psychiatrist pick up on an underlying Autistic Spectrum Disorder?

I would think that unless you present with most classical symptoms it is more likely that you might be offered some personality disorder (it would be a good idea to read a bit about those beforehand).

It depends on the person. AS was first noticed in me by someone who didn't feel qualify to diagnose it (who diagnosed me with social anxiety eventually).
