how come sometimes us aspies can regress in terms of how mature we behave?

I think it has to do with what is known has wearing a mask.

I think it can be a whole bunch of factors such as who we're hanging around with at the time, where we are, what our emotions are at the time and a whole bunch of other factors. I know for me people and how I'm feeling at the time are two big factors. Yes, and a lot of it has to do with putting up a facade around different people and in different circumstances.
