Sorry if this has been asked before. I am wondering what tools might be able to be done for an adult to be assessed for learning disabilities or other things like executive functioning, sensory stuff, etc while undergoing an ASD assessment?

For ASD: the ADOS Module 4 (Verbally fluent adults) is a good diagnostic tool.

It depends on the learning disability: I was screened for dyscalculia during my autism assessment using the WIAT-III, but that test only addresses reading and math difficulties. As neobluex said, the ADOS 2 is the standard measure to test for ASD's; usually sensory issues and executive functioning problems are picked up in the initial intake interview as more of a self-report, or reported by parents via the BASC-2 or the ADI-R. You might find OTs who have methods of clinically testing for sensory problems, but usually people who have them are very aware that they have them, without needing to be tested.
