I've never really thought of any of my behavior as stimming because what people call "stimming" seems to be repetitive. The description of stimming and the people shown stimming in videos are doing the same things over and over again without much delay in between the movements.

Since I have gotten into sign language (and found that I love gesturing with my hands) and moved to a place where I feel safe to appear "weird" in public, I've found myself doing a lot of random hand gestures, but they aren't repetitive. I don't do the same ones over and over again. I might make a gesture once or twice a day and then not do that again for a week or more or ever again. Some of the gestures are random and not something that I'm particularly attached to, I just feel like doing it in the moment.

So is stimming supposed to be repetitive? And what about just random hand gestures?

quite an extreme

Stimming is a expression of feelings and for this related to them. It's related to motions you can't suppress them without suppressing the feelings. Guess it's not required to be repetitive ones.
Btw. dancing is kind of stimming and related to expression of emotions als well.
As well is head banging aso.
