I'll bring, let's see, one of my favorite salmon dishes:
1 Salmon fillet
1 tomato
honey + mustard - mix them to taste, I like a ground mustard for this.
capers
broth- I usually use veggie with a little chicken stock too.
white wine- for the broth
Put the fillet in a roasting pan, add broth to cover 1/2 of salmon (if that makes sense, you're doing a combo of poaching and roasting)
spread a little honey mustard on the fish
cover w/ one layer of sliced tomato, add capers.
Stick in 350 oven until done, depends on thickness of fillet, etc.
Good stuff.
another:
get an orange, grate the rind off of it. mix a little rind with a lot of sugar and a little salt, spread over the salmon, broil. This orange glaze is awesome and very simple. Hardest part is not burning the sugar while still caramelizing it and cooking the fish. Generally I go with the bottom rack for the broiler.
