I quite like mushrooms. My favorite are probably just plain portabella mushrooms, the small ones, though, not the monster sized ones. The small ones I think actually taste better, and they're easier to work with. Like some people like frying/grilling the giant ones and making them into burgers, but I feel they're just awkward to cook.
My favorite recipe for mushrooms, is pretty much make a Philly cheese steak with mushrooms. Saute some onions up in oil, along with some green peppers or red peppers (or if you're using jarred red peppers, then put those in last as they're already cooked and just need to be heated) the peppers take the longest to cook. Possibly add a little Adobo/seasoning salt to it, too, not too much. For a sauce, use Worcestershire sauce and soy sauce, usually more Worcestershire sauce than soy sauce, and keep adding a little water (like 5mm) as the sauce boils off (unless you want more sauce, don't use too much soy sauce, though, it's too salty) then once the peppers are almost done and to the point of softness you want, then add your mushrooms, fresh or canned, obviously fresh is better. The mushrooms go last, as they don't need much cooking time. Then, you can either put it in your bread of choice like that with maybe some hot sauce on it, OR go melt cheese on, my favorite cheese to melt on it is provolone, though whole milk mozzarella comes a close second. If you wanna have a bit more "volume" to this, oddly enough, chickpeas work quite well in the sandwich, so you can basically add as many canned chickpeas as you have mushrooms, and it's quite good that way. I've not tried other beans for "volume" though, but chickpeas work well with it, imo. But, more mushrooms, the better. Obviously, too, you can add meat, too, but it's good without it.
