I made a butternut squash curry today. It is great. The squash had a ton of flavor. Loaded it up with spice, heat and oil.

I made sauteed mushrooms with ginger and garlic. Softened the garlic, ginger and spices in oil. Sliced the brown mushrooms into crescents and added them to a large skillet.

Cooked it down until all the released moisture was gone and deglazed with Balsamic vinegar.

I made spicy eggplant with cumin and mustard seeds. The eggplant was steamed first for about 10 minutes. This is a Jamie Oliver trick and works very well. Softened the onion, celery and bell pepper with the spice and heat. Added the steamed eggplant and let it cook for about 20 minutes. Yummy

Tuna salad, simple enough to make. Small dice carrots, celery, red cabbage. The cabbage is more purple. I have good knife skills. Bind it with mustard and some jalapeños. It looks like confetti.

This morning I made split peas or dal. Soaked the split peas over night and simmered them for about 40 minutes. Added them to sauteed onions, celery and spices. Cooked it for about 20 more minutes. Dal is always good to eat.

Braised chicken, the choice of chicken at the store was poor. Tyson chicken thighs is not my favorite brand. Browned the chicken with coriander, cumin and ginger. Covered with boiling water and simmered for 30 minutes. I dice it and add the chicken to stir fried.

Hard boiled eggs are great. Poke a whole in the big end so air can escape and the egg won't crack. Cook for 11 minutes at a slow boil. Put them into cold water and peel. They come out perfect. Bright yellow center with no green sulfur rings.

Simple poached salmon fillet, take a small salmon fillet and put it in a covered fry pan with water at a slow boil. Flavor the water with hot sauce and coriander. Cook for 5 to 6 minutes. Fast and easy.

I miss pasta. It is not on my diet. I use steamed cabbage instead.

I have oatmeal every morning. I make enough to last a few days and reconstitute it in the morning. Rolled or steel cut oats are made with fresh cranberries, cardamon, cinnamon and clove. The oatmeal is put in a container and divided into portions. In the morning, I boil some water and mix in flax, coconut, protein power and more cinnamon. The cold oatmeal is added to the breakfast broth. Hot oatmeal soup for my early breakfast.

Whole grains are fairly easy. Many cook in 15 to 20 minutes. I use bulgur, barely, farro and quinoa. Throw them into boiling water and let it cook over a low flame. Drain when it is done and put into a container. I use if as a side dish.
