Mine:

Johann Sebastian Bach (Germany, 1685 – 1750, for example: cantata BWV 147 - 1. Herz und Mund und Tat und Leben)
Antonio Vivaldi (Italy, 1678 – 1741, for example: opera Moctezuma)
Georg Friedrich Händel (Germany, 1685 – 1759, for example: oratorio Messiah - Hallelujah Chorus)
(all Baroque :) )

I have difficulty picking out a single composer and have the same problem with modern musicians. I like specific songs, but more often than not, I don't like the majority of songs on a specific album or by a certain artist. However, at the moment I enjoy Chopin, particularly Fantasae Impromptu.

Vivaldi and Debussy are my favorite. Can't say that I enjoy Chopin so much. On the other hand, I find I like particular guys with the batons more than others. Whether or not I like Ravel's Bolero is completely dependent on the conductor. The best and only version that hasn't irritated me is the slowest, just the way Ravel intended. :)
I really like Baroque, but not all of it. I don't like that weird background music they play at parties. I feel like I should be wearing a wig or something, haha. But, I like more soulful music, like the Four Seasons, which I was addicted to, just a little time ago.

Fantasae Impromptu is amazing, though. Chopin must have had a dex of at least 17. :)

so many composers, so much individual brilliance; vivaldi, bach, handel, mozart, beethoven, rossini, liszt, wagner, verdi... all the way to philip glass and michael nyman. i find it hard to identify one particular favourite.

to quote bonuspoints:

i agree with this and i almost find it frustrating that music is my only seemingly non-focused interest.

*edit.

oh, and happy belated birthday Scientist. :D

I like too much classical music to be able to pick a favourite. J.S. Bach and W.A. Mozart are at the top of my listening list at the moment.

There are way too many for me to pick, I have favorite pieces/composers from early music to modern music. The classical music that I listen to really depends upon whom I am in the mood to listen to at the moment. I am currently in the process of listening to a lot of Haydn, Bach and classical renditions of Christmas carols.
