I'm writing a book for one of my friends (it started as an inside joke but now it's a serious project). Is there such a thing as too many climaxes/high points/plot twists in a book?

But, yes, it is possible. When it gets predictable you have a problem. Keep it to two or three.

although some authors can truly pull it of, george R R Martin being the main one IMO.

How long is the book and how creative are you? The longer the book and the more able you are to come up with actually new ideas, the more plot twists you can have.

By definition a story has only one climax.
