On Facebook Messenger for example, if your girlfriend is online and you two talk every day, you will be right at the top of her list showing other people who are online - like it is designed to be glaringly obvious because Facebook wants you to message that person. So it's a bit hard to ignore. If there's a LOT of inconsistencies between what you say and what your online activity shows, I think it would make anyone feel a little uncertain. That might be why she started checking your Whatsapp activity as well, so she can reassure herself you're not lying to her and just have an issue with your phone/laptop/logging off
I think what she's doing is self-regulating, not stalking. Sane people don't naturally get like this unless they find a reason to feel concerned. And obviously you've realised that there are some technology issues involved
I bet my ex thought I was a stalker too
