Why height doesn't matter: it is only one way of making her feel secure.
The way to find out why women want a certain trait is to ask them in the right way. If you ask, "Why do you like tall guys?" she will answer, "dunno, sexy." If you ask, "How do you feel when you're with a tall guy?" you will get an answer you can use.
Random comment: The smartest woman I ever met told me she likes a guy that makes her feel a little bit dumb.
Tall guys that slouch are a turn off, because it's all the more obvious when you do it. Slouching says "lack of confidence" which cancels out any protection value.
