That's somewhat true, and you cannot interact with 1,000s of people, so therefore, it makes no sense that online dating makes thousands or even millions of potential partners available to you. You cannot interact with all of them anyway, and you cannot even write targeted messages to many of them (unless you are a spammer).

You can meet thousands of people in real life or you can message thousands of people on a dating site. The difference is, on a dating site you know they're single and seeking a partner. In real life you don't have that knowledge.

That's not exactly how it operates. On dating sites, people are extremely picky and have unrealistic expectations because they need filters that works and excludes a huge majority. IRL, you know if people are interested in you because they flirt back with you, something you cannot detect online. Also IRL, people are not so picky because they cannot easily make contact with a lot of people with a romantic overtone, so they will settle for less.
