At this point in the documentary, Steven is just fantasizing about the possibilities. In The Scent of Green Papaya, the servant girl does come off looking a whole lot more appealing than the rude upper-class woman.

In fact, women do seem more apt to pursue married men than men to pursue married women.
Look, for example, at Governor Mark Sanford and and Senator John Edwards: two prominent Carolina politicians whose career aspirations came to a halt because they had been seduced by wayward females. I don't know of any female politicians who have been similarly brought down by wayward males. Hillary Clinton was humiliated by her husband, but remained chaste and pure. Ditto for all of the other politicians' wives.
Men, I think, are more likely to respect another man's wife as another man's property, and therefore to regard her as strictly off limits.

In the Old Testament, adultery was defined as coitus with another man's wife. It was a property crime.
You could ask your neighbor to lend you his hammer when you needed it, but not his wife when you were feeling horny.
If sailors' accounts of some Polynesian islands during the 18th century are to be believed, the Polynesians hadn't quite developed the idea of accumulating wealth and things. Property ownership was somewhat more fluid. You could borrow your neighbor's wife, and there wouldn't be any problem.
In the Western World, we developed the concept of acquiring and accumulating property, wealth, possessions, etc. a along time ago, and, for much of our history, counted our wives among our property. And, our wives were no-one else's to touch.
Hence, we still retain a certain tendency to regard our neighbor's wife as his, and to cuckold him would be to offend him greatly.
Moreover, a good Catholic man would still abstain from both married and divorced women. He might fornicate a divorced woman, but, in the eyes of his church, he could never marry her.
Well, I'm sure that he wasn't deliberately or maliciously so. In some ways, he was very sweet to her.
