Why is it single can mean you not married or you don’t have a boyfriend?

Because people associate being single with having no regular sex partner (e.g., "unmarried or not involved in a stable sexual relationship" -- Oxford English Dictionary).

So at what point in a relationship do two people go from "dating around" without any problem to "cheating" on each other?

If you spend any time with anyone, then I guess your not single, if "single " means alone
