It doesn't "trick" the brain.
It's the chemical associated with umami/savory/hearty flavour.

More glutamates = more umami taste.

Trying to frame it as a trick or by analogy to addictive substances is admitting a fundamental misunderstanding of how it works. Acids are sour, alkalines are bitter, glutamates are umami. There's no trick involved.

Are you sure? Because my math teacher from seventh grade said he failed a drug test and came up positive for opium because he was regularly eating poppy seed bagels. I think when people say there's no opium in poppy seeds, what they mean is there's not enough opium to get you high, so it's probably legal because it's not intoxicating or addictive at the level that it's present in. A trace amount of opium would be enough to create very mild food cravings without leading to a real opioid addiction. The difference between the opium in poppy seeds and the opium needed to get you high would be like the difference between the dopamine reuptake inhibitors naturally present in chocolate vs something like crystal meth. Those substances haven't been banned because they're far too weak in their effects to actually be a problem.

It's also worth noting that opioids are naturally present in the human body, because our brains create them as a way to inhibit pain after an initial pain response. We have an opioid pathway, which is a built-in mechanism for processing the opioids created in our brains. The problem with street opioids is they're like 100x more powerful than the opioids our brains produce naturally. A blanket ban on all opioids, including very mild ones, would make about as much sense as a ban on melatonin.
