Seemingly pointless conversation/greetings...

No matter how hard I try, I always say something stupid...

"Hey, what's up?" "I'm good"

"How are you?" "Heya"

"Hey, What's new?" "Hello"

"Thanks, enjoy the show" "You too [to the cashier]"

It's just these quick passerby conversation I always mess up. I can't think quickly enough to respond. They don't stop walking to talk, they just keep going. Lately I've been trying to make direct eye contact (which can be difficult sometimes) and smile. That seems to work.
