Yeah, I have this same issue. I feel like I make people uncomfortable, but I don't know how to stop. I began doing it to show people that I was listening to them, and I guess I just go overboard. It's especially bad if I'm around authority figures, like during job interviews and stuff. I'd definitely like to know what to do about it too.
Sometimes I try the strategy of mimicking the other person, like if they look away, I start to look away too, and then I enter a cycle of looking at them for 5-10 seconds, look away for a few, look at them 5-10 more seconds, etc.
While this doesn't exactly "cure the problem"(When people usually interact, they're like always looking at each other as they do the "facial expression dance" whose steps I obviously don't know.), I think it can reduce the 'problem'. It's like a palliate.

(Hehe, just had to use that big word because I saw it on an IQ test and I didn't know what it meant so I had to look it up, and now I want to remember it by using it.)
