Mission: Impossible

Mission: Impossible deserves special mention for the fact that it had a new opening sequence for every single episode, with the footage taken from the episode you were about to see. Amazing.

ABC Wide World of Sports (the thrill of victory and the agony of defeat)

I loved in Fringe how they changed the intro in the flashback episodes. A great little eighties homage.

For classic TV:

Mannix (the opening montage, and the theme song were both awesome).
the Avengers (ditto)

Hawaii 5-0 (the original series): visual were so-so but the theme song was awesome.

Starsky and Hutch: ( ditto).

I'll second Mission Impossible and add...

Cowboy Bebop

I'm not really an anime fan, but that show was just cool.

Can't forget Ironside. Anyone who's seen Kill Bill will instantly recognize this music:

And I can't leave out my other favorite show starring Raymond Burr. Here's the terrific Perry Mason opening and music:

For cartoons, the opening sequence for The Flintstones was great.
