I tried to jailbreak my iPod Touch 2G 8GB just now and I have to restore it with iTunes because it wouldn't work and got all messed up. I would really like to jailbreak it because it's so old that I can't update it or download any new apps. How do i do this accurately?

Generally speaking, you're stuck with the apps that are designed for the version of iOS that your ipod runs. --Apple is very particular about the software that their hardware runs.

There may be a way around this, but if you run updates your , you run the very real risk of bricking your iPod.

If it's so old you can't update it or install new software, it's because the hardware isn't powerful enough. Whereas an iPad Air is twice as powerful as a PS3, the 2. generation iPod Touch is about as powerful as a first gen. Xbox (~20% more powerful than a PS2).
