Personally, I'd have to say it's a toss-up between "The Tale of Scrotie McBoogerballs" and the two-part episodes "Cartman's Mom is a Dirty Slut/Cartman's Mom is Still a Dirty Slut."

I generally like the episodes that mock Canada.

Last season's Freemium Isn't Free was priceless, especially with the introduction of the Canadian devil- Beelzeboot.

I also really like the Halloween episode where they go as the Avengers and Randy buys the Blockbuster Video.

There was another one where Butters found a video that was supposed to be Lord of the Rings but was an X-rated video. He turned into a Gollum for porn.

Butters suffering the tribulations of Job is also generally entertaining.

Their 'Farewell' episode.

You'd probably have to be the one to write it...

I don't really have a favourite one, but to name a few: Ginger Kids, Make Love, Not Warcraft, Trapped in the Closet and Tsst. Also, I like Two Days Before the Day After Tomorrow because of the 'I broke the dam' moment.
