Episode 1: Hard to chose since not much good in this movie - probably just the light saber dual between Darth Maul, Obi Won and Qui Gon.

Episode 2: Yoda vs. Dooku

Episode 3: Palpatine vs. Yoda

Episode 4: Obi Won vs. Vader

Episode 5: Luke failing, and then Yoda succeeding, in lifting the X-Wing

Episode 6: Vader turning on Palpatine

Episode 7: Rey and Finn escaping in the Millenium Falcon

Episode 8: Luke vs Kylo

Rogue One: Hard to chose here because a lot of good stuff - the destruction of Jeda City, the destruction of the imperial archives, or Vader going after the stolen plans

Solo: Only saw it once so hard to really collect my thoughts, but probably the whole train robbery scene.
