This was a very hard choice to make, but I ultimately went with the original G1 Prime. He laid the foundation for everything that Optimus Prime should be. He even established what an Optimus should generally look like or turn into. He also struck a nice balance between the stoicism that has probably been exaggerated with more recent Prime incarnations and more casual and "human" characteristics, like using Earth slang and having a sense of humor. I love how Michael Mercy described it in this video.

A very close second for me would be the Animated incarnation, which is a very different take on Prime. The writers did a very good job of creating a younger, less experienced version of the Autobot leader who grew into something more akin to the classic Prime over the course of the series. He has the same appeal to me, and maybe many other viewers, as Optimus Primal in Beast Wars.
