I have it set to "If only I was born in the year 2000..." but it won't show under my posts.

Click on "My Account" then "Edit Profile." There is a long list of "Yes/No" options for your account. A little more than halfway down that list is "Always attach my signature." Check "Yes." Your sig will retroactively show up in every post you've made to WP, and if/when you change your sig the new one will overwrite the sig line in all your old posts.

Not quite. The "retroactive" bit, for the flags, doesn't happen.

Every time you post, there's the option of attaching, or not attaching your signature, to that specific post (or PM). That yes/no flag stays as whatever you set it as, when you hit "Submit". (However, you can change it when you edit a post (or PM).)

The yes/no option in your profile determines whether the DEFAULT, as you start a post (or PM) is set to attach a signature, or not.

It did when I added a sig line, and I've watched Fnord change his sig twenty times lately and it's always overwritten the old ones.

Yeah, there is that option, but I think most people would just tend to stick with the default.

Your signature text is only held in one place on the entire database, as part of your profile.

Your profile also holds a flag that specifies what the default state of the signature flag on a post/PM should be, when you first start editing a new post/PM. That is the ONLY thing this flag in your profile does.

Posts and PMs never "contain" a signature. They have nothing but a flag that says whether the signature text (from your profile) should be displayed on the post/PM or not. As you start a post/PM, it is set according to the above default. You may change it. When you edit a post/PM after submitting it, you may also change this flag.

If you blank out your signature text, none of your posts/PMs will show signatures (as they never contained the text, anyway). However, their signature flags will remain as they were.

If you then put text back into your signature, all the posts/PMs that have their flag set, will again show the signature.
