When there's only one way to win.
I loved The Force Unleashed, however there was one part in the DeathStar level that I hated, because it was a long and unskippable cutscene.
That part was where Juno tells you about the Gravitron Rings, where you have to use them to get to the area where the Emperor is located.
It was maddening because there was no midway savepoint; and if you died before reaching the hallway where Vader was located, you still had to go back to the beginning and listen to her long b o r i n g explaination again. And again. And again. Often it could take me an hour to get through all of the DarkTroopers, and I just wanted to get it over with.

To bash, crush, bisect, or send into a black hole, they should make multiple ways to kill a bad guy. Especially a boss.

i like customization as much as possible, like in dragon age where you can make a character and make him\her look the way you want, or the sims which basicly has the same thing only more in depth.
also cutscenes cause i love to record them, but they have to be interesting cutscenes which dragon age kinda lacks, i'm in the process of recording crisis core, sonic adventure, and getting ready for ff13.
3d, which kinda speaks for itself, i suck at 2d something fierce.
no timed reactions, so help me god i hate those.
no multi player, i have my own reasons, i love single player games.

I hate it when games make wolf-killing part of normal game play.
I'm an old ultima II person that quit online gaming for a long time then dabbled in WoW for a weekend, (by dabbled I mean that I wasn't bathing, or going outside), but just couldn't tolerate the wolf killing. I'd like to play an elf or mage that doesn't have to see any wolf-killing.
Anyone know of a WoW-like game that doesn't involve wolf-killing? I prefer games that aren't set in futuristic landscapes.
On the other hand, does anyone know if there's an avatar-ish online game? (as in the movie)

wolf killing? like killing wolves?
i personally played wow for 1 and a half years killing wolves didn't bother me. conquer is the only game i can think of that you don't kill wolves but the creators destoryed it basicly that and it has the dreaded pvp and ganking like you've never seen.
