Wiki suggests senbei are a thing in China and Japan. Obviously adjust for specific national variants.

I think if she is really nostalgic about a particular cookie from her childhood. Get her that exact cookie. It might be the wrapping and all sort of things that are special to her. So whilst it is a nice touch to bake them, I'd get the original.

Kanelbullar you could bake but not singoalla, if you see what I mean? Not that I crave Swedish food or anything, besides elk! But I am so past asking English butcheries if they stock elk.... never going to happen.

That is correct. Senbei crackers are commonly available in China.

How about going for a double-whammy? Get her a few packs of Senbei (whichever kind she's nostalgic about), and also try your hand and making your own. At best, she'll now have a BF that can make her Senbei on a regular basis, and at worst, you'll get a funny story/memory out of it. ("Remember that time you tried to make me Senbei?")
